Without question, the Instant Pot is my most favorite kitchen tool. It’s also super quick to make delicious Paleo-friendly desserts, like this Apple Chutney one. And do you know what I love most about Paleo recipes? They are also healthy enough to enjoy for breakfast!
It’s All About The Apples
I prefer to use granny smith apples for this Paleo Apple Raisin Chutney because I like the blend of sweet and tart. However, you can use ANY type of apple. Chop your apples into large ½”-1” pieces. There’s no need to peel (who has time for that?!).
Toss in your apples. Add in your raisins, cinnamon, salt, water, and coconut oil. There’s no need to melt your coconut oil – the Instant Pot will take care of that! (Note: butter will also work well in this recipe.)
Instant Pot Apple Chutney: Secret Ingredient
Now for my secret ingredient – collagen! Add 1 tablespoon of collagen. This will add a wonderful boost of protein and deliver a whole host of wonderful amino acids and nutrients. I personally love collagen from Vital Proteins. (And in case you’re wondering, have no fear — it is colorless and odorless.) You can totally skip adding this magic ingredient, but I’m always looking for ways to add protein to our diet!
Make sure you use the sealing ring you’ve dedicated for sweet dishes. The rubber sealing ring will retain odor and the LAST thing you want is for your delicious apple raisin chutney to taste like last night’s curry. 0_o You can purchase extra sealing rings from Amazon, like this one. I keep mine in a ziplock bag labeled “Sweet” so I know which is which.
Set the IP to manual pressure for 4 minutes. Set the valve to sealing and let the IP do the rest! You can use a quick release or a natural release. Give it a stir before serving. Enjoy it warm or chilled. This recipe is so fast and easy to make, I even threw it together today while I’m sick with the flu. It’s that good.
