Cook Time
  • 6-8cups potatoespeeled and diced into 1-1/2″ cubes
  • 1-1/2cups water
  • 2-3teaspoons salt
  • 2-4tablespoons butteror Soy-Free Smart Balance, olive oil, or mayo
  • 4-6tablespoons milkor dairy free alternative, like almond milk
  1. Peel your potatoes, dicing them into 1″ to 1-1/2″ chunks. (I prefer to use golden potatoes because of their creamy texture.)
  2. Don’t use more than 8 cups of potatoes.
  3. Add 1-1/2 cups of water, which allows the Instant Pot to come to pressure.
  4. Add 2-3 teaspoons of salt (to taste).
  5. Check the sealing ring, attach the lid, and close the pressure valve.
  6. Select MANUAL for 10 minutes.
  7. Once the program is complete, quick release the pressure. You’ll notice that all the water has absorbed into the potatoes. Any remaining liquid can easily be mashed in — no draining required!
  8. Add butter and milk (or what we use: Soy-Free Smart Balance and water/almond milk) to get it to the desired creaminess.
  9. Use a potato masher to blend together.
  10. Don’t forget to turn off KEEP WARM so that your potatoes don’t dry out!
Recipe Notes

I use the Oxo Good Grips Potato Masher to mash directly in the Instant Pot. (It’s also fantastic for mashing avocados for guacamole or eggs for egg salad. This masher is one of my top favorite kitchen tools.)

Low FODMAP Diet Note: Make sure that your milk and butter are lactose-free. As always, check the Monash FODMAP app for recommended serving/portion size.
