January is the start of a clean eating plan for many people including Whole30, Primal, Paleo, and many others. Personally, Clint and I (Candie) have been eating Paleo for 3 years. Every once in a while we eat a more traditional diet (usually due to travel or family holiday gatherings) and every time we quickly come back to Paleo. Stemming back to my childhood, Wednesday night has always been spaghetti night in our house. My mom started this tradition as a way to survive the hectic, busy Wednesday rush between school and evening activities. And when you throw in my Italian heritage, a meaty marinara sauce over a steaming bowl of noodles was simply perfect.
But, believe it or not, spaghetti night needed an upgrade.
We buy our ground beef in bulk from a local farmer (or sometimes Costco) and store it in the freezer. While this saves us incredibly money, it does require remembering to thaw my meat.
Which is something I’m TERRIBLE at.
There are few things I love more in this world than delicious flavor and things that excite the tastebuds. In our area, there are so many restaurants that boast international flavors: Indian, Mexican, Italian, Chinese. I love cuisine with an exotic flair. And curries are amazing.
Unfortunately, with my family’s diagnosis of Celiac disease this past summer, eating out has become almost completely impossible. Continue reading
Without a doubt, fall is my most favorite season. I love it all: the cooler weather, the splash of color on the leaves, the coziness of being wrapped in sweaters, and the warmth from a bowl of delicious soup.

If I had to pick ONE soup that is a hands-down favorite in our home, it has to be Zuppa Toscana. This recipe has morphed through the years as our own personal food journey has evolved (no more instant bouillon cubes or corn-syrup-sausage, thank you!).
