RECIPE: Easy Instant Pot 4-Minute Simple Salmon (From Frozen!)

Who says you have to go to a fancy restaurant to get delicious salmon? Discover how easy it is to perfectly cook frozen salmon in your Instant Pot.

I really enjoy a quality-prepared salmon. Growing up, the only fish we ever ate was tuna fish straight from the can (with mayo, of course) or the random box of fish sticks once every 6-8 months. Fish just wasn’t part of my childhood.

As an adult, I began to discover that I really liked fish (especially salmon). But I tried to prepare it once at home. Yes, just once.

And it was awful. It was dry. Overdone. The house smelled all fishy the entire day (a smell my husband does NOT appreciate, lol).

So, sadly, I let this bad experience scare me off.

Until I got my Instant Pot.

Being Brave Enough To Try Again

I love participating in the Instant Pot Facebook Community group. I glean new recipes and learn all sorts of new ideas. One of the group members, Rich Lum, continuously posts amazing recipes of his salmon creations.

On a night when I was desperate for a fast dinner, I decided to shoulder my fear and give frozen salmon a try.

I intentionally did NOT marinate my salmon. I figured cooking it plain would be the ultimate test of how well the Instant Pot could do. When the pin dropped and my fish was ready, I had a pretty significant lump in my throat. My expectations were QUITE low — especially given my history with making fish before.

And you know what?

The salmon was CRAZY AMAZING.

Tender. Juicy. Perfect texture.

And more impressive? THE HOUSE DIDN’T SMELL LIKE FISH DEATH. 🙂

I took a picture of my triumph and immediately put it on the menu again for the next week. And by the way, don’t judge my photo (or my paper plate… or bagged salad…). Not every meal a food blogger makes looks like a cooking magazine, lol.

How To Make Salmon Using Frozen Fish

Begin by removing your frozen salmon from its packaging. There is no need to thaw overnight (which saves you time! YES!).

Place your salmon on a trivet. I was able to place two large salmon filets on one layer. Or you can get a second trivet to layer them.

Add 1 cup of water to your Instant Pot.

Check the sealing ring, close the lid, and select MANUAL for 4 minutes. Once the program is complete, you either do a quick release (which could risk drying out your salmon) or allow the pin to drop naturally (which usually takes mine 2-4 minutes… surprisingly fast for IP recipes).

DO NOT ALLOW YOUR SALMON TO HANG OUT ON KEEP WARM FOR LONG AFTER THE PIN DROPS. This will most certainly cause it to dry out.

Remove from the trivet and plate immediately.

If you’re looking for creative ways to serve your salmon, you can use mini loaf pans (stacking them) with a marinade (like 1/4 cup teriyaki or sauce sauce or lemon slices). According to Rich Lum, you’ll need to up your time to 8 minutes.

RECIPE: No Drain 10-Minute Instant Pot Mashed Potatoes (Plus DF options)

We love mashed potatoes at our house. Like, love love love mashed potatoes.

So you would think that for as much as we love them, we would eat them often. But we don’t — mostly because of the mess it makes.

I’m notoriously bad at letting my boiling potatoes foam over on the stove (and few things are worse than THAT starchy mess). It always feels like it takes forever to come to a boil. And then you risk scalding your hands trying to drain the liquid.

I’ve dumped more potatoes in the sink than I care to admit.

So you can imagine my excitement when I realized that I could make mashed potatoes in the Instant Pot — and didn’t have to drain them.

Less you missed my excitement, let me say it again.

I made mashed potatoes quickly and DIDN’T HAVE TO DRAIN THEM!

No Drain 10-Minute Instant Pot Mashed Potatoes

Peel your potatoes, dicing them into 1″ chunks. I prefer to use golden potatoes because of their creamy texture. Don’t add more than 8 cups of potatoes.

Add 1-1/2 cups of water, which allows the Instant Pot to come to pressure.

I like to add 2-3 teaspoons of salt (to taste).

Run your Instant Pot for 10 minutes on MANUAL setting. Once the program is complete, quick release the pressure. You’ll notice that all the water has absorbed into the potatoes. Any remaining liquid can easily be mashed in — no draining required!

Add your desired amount of butter and milk. Personally, we are a dairy-free house hold so we use Soy-Free Smart Balance (for butter) and a splash of water or almond milk to get it to the desired creaminess.

Actually, I made my mashed potatoes dairy-free for Christmas and NO ONE in my extended family could tell that they were dairy free. These potatoes are just. that. good.

I use the Oxo Good Grips Potato Masher to mash directly in the Instant Pot. (It’s also fantastic for mashing avocados for guacamole or eggs for egg salad. This masher is one of my top favorite kitchen tools.)

Without a doubt, fall is my most favorite season. I love it all: the cooler weather, the splash of color on the leaves, the coziness of being wrapped in sweaters, and the warmth from a bowl of delicious soup.
